It's an early start for everyone here at Pastisserie Sant Jordi and iaia Rosa is always first in the kitchen.This is her favourite part of the day, preparing her bakes and looking out over Barcelona. First seeing the wonderful patterns as street lamps light up our incredible stained glass window. Followed by the sun rising and the joy of La Rambla reaching full flow.
The bakery has always been famous for pulling different flavours together, and always making sure that every part of an ingredient is used.Iaia Rosa’s unique knowledge of her kitchen means that nothing ever goes to waste, and her bakes are created with utmost care and attention.
Iaia Rosa has always said that pastisserie is about order. Whether that is laying out her delectable counter, or making sure that all the ingredients are prepared in the right way.We think that might be the secret to her incredible treats!
